Is it charity if you take it off taxes?

I just don’t understand people give to charity and they always want to take it off their taxes. They pay tithes at church and they always want to take it off their taxes. If you take it off your taxes, what are you giving? You really aren’t giving anything, just taking it off your taxes. I just really don’t understand that. You give to charity or something give and forget about your taxes. Thank you.
